2 The January ladies luncheon saw over 100 attendees enjoying not only the food but the fashion show presented by The Dress Barn. Ann Bricker chaired the event with models Betty Rogers, Lois Sebesta, Mary Ann Cone, Margret Atwood, Joyce Crawford, Rosie Zentner, and Brenda Woodbeck: Now that it's past Christmas and New Years, I feel like the train that barely makes it to the summit, but once it crests, the downhill runs picks up speed in a hurry!! Here we are in January, and already thinking about planning for next fall, looking board personnel, for committee heads, etc. etc. Speaking of which...as most of you know by now, I'm always enthusiastically looking for full time residents to become more involved. So if anyone is interested, or you know someone you think might be a good candidate, please contact me. Along the same line (sort of) I want to encourage ALL snowbirds to make an attempt to get to know their fulltime neighbors. They are the people who are our eyes and ears when we're away, and I for one appreciate that very much. Have a block party, have them over for coffee (or something stronger), whatever. Be friendly. Just because things have quieted down for now doesn't mean it will stay that way when summer comes. The next luncheon is scheduled for February 10. The association has no jurisdiction over the management. Individuals who have problems and/or complaints are asked to follow the following guidelines for making management aware of any problems: Obtain a complaint sheet (located outside the office) and put your complaint in writing. Park business - A few friendly reminders Clubhouse/pool hours: Sun - Fri 7:30am - 10:00pm; Sat 7:00am - 10:00pm, except for special events that have been pre-scheduled. 2. Remember to keep dogs on a leash and pick up after them. 3. Rents are due on the 1st and late on the 6th at 4:00pm. 4. Parking rules will be enforced as we have had too 1

Every Sunday 6:00pm-Clubhouse Our non-denominational group meets weekly to explore God s Word. For this season the Bible lessons will be by archeologist Ray Vander Laan. These DVD lessons are on-site in Israel. You are welcome to sit and listen or join in as you wish; it is up to you, but whatever you choose, we look forward to seeing you. The invitation extends to our First Responder (Police and Fire) Veterans as well. FEVA offers the opportunity to retire your tired and worn flags with honor and respect. Please deliver your torn and damaged flags to either Dick Wright (#1) or Dick Baird (#109). Your flag will be honorably retired by the Elks Lodge sponsored Boy Scout Troop with an official and proper ceremony. Your donation for 50/50 tickets sold at Saturday coffee is the main source of income for this organization. Your support means that they can in turn help others in the park. Saturday, February 13 7:00pm-Valentine s Dance Wednesday, February 17 Book Club 1:00pm-Library Consider joining the Fountain East Book Club. We read a selected book the month before then discuss it at the next meeting. We usually fiction but have been known to find a non-fiction book members like. Our February book will be All The Light We Cannot See by Anthony Doerr. It won the 2015 Pulitzer Prize for fiction. The story centers on a six year old blind girl in occupied France during World War II. Come and share your opinions. It is interesting to get various takes on the same book. Also bring your suggestions for books you would like to read and review. We have a good time and, as usual in our park, we have refreshments!! Looking forward to seeing all of you there. If you have never seen them, you are in for a treat, and even if you have, you will want to see their performance again. The Nostalgics have performed in the Phoenix metropolitan area for well over 30 years. You will be amazed. Don't miss this one. $5.00 at the door. Sign up with Audrey Brewster # The March Craft Fair has been approved to be extended an extra day and will be held on March 4 & 5. Times will be from 8:30AM to 4:00 PM. Crafter's are needed to come in and set up on Thursday evening. If you have your own tables, it would help. Spaces are limited so sign up early. We are also needing baked goods for the bake sale as well as help in the kitchen and at the bake sale table. Please sign up in the hall or contact Lynn Carrell at , lot#176. And don t forget that this is the time of the year to clean out those unwanted items. Your junk is someone else s treasure. Don t miss the patio sales to be held this same weekend. More information coming next month December 10--It was entertainment by Anything Goes, a barbershop quartet. Following the show, residents enjoyed an ice cream social. 7

9 December 25 The annual Christmas dinner would not have been possible without all the elves who worked so diligently to make sure that everything was perfect: Karen Kube who made all the breads; Judy Verhulst who did the potatoes; Linda Wight who did the hams and provided the Jello salads; and Helen Knobbe for spearheading the dinner. The year ended with a gala celebration dance as residents toasted in the New Year 8

10 January 15 was the annual chili supper chaired by Judy Paxton. 120 residents and guests attended the function. Linda Wight made 4 roasters of chili; Brenda Brooks all the corn muffins; and Margret Atwood the dessert. After the dinner, everyone was entertained by the vocals of the Doo-Wop Divas. January 16 saw the return of the Needham Twins playing our favorite kind of music. The floor was full as people danced everything from the two-step, the polka, the twist, and of course there were a few line dances. 9

12 There have been requests for these recipes that residents have enjoyed at various functions. Please enjoy! Rigatoni Alfredo Recipe from Brenda Brooks (December Ladies Luncheon). Please note: amounts are to taste. Adjust as needed. ½ of a 1# box of rigatoni, cooked 3 ounces Italian sausage (mild or spicy or both) Cover bottom of baking pan with your favorite red spaghetti sauce. In a large bowl, mix cooked rigatoni with about 1 cup Alfredo sauce (from a jar). Mix with a little Garlic Alfredo Sauce if desired. Mix in shaved or grated fresh Parmesan cheese and about 1 good cup of grated mozzarella cheese. Pour over red sauce in pan. Top with a scoop of red sauce; sprinkle with additional mozzarella cheese and Parmesan cheese. Bake at 350 until heated through. Raspberry/Cranberry Salad Recipe from Linda Wight (Christmas Dinner) 1 6 ounce package raspberry Jello 1 can whole cranberry sauce 1 cup crushed pineapple, juice and all ½ cup Burgundy wine (optional) a cup chopped walnuts Dissolve Jellow in 2 cups boiling water. Stir in whole cranberry sauce, pineapple (with juice) and wine. Chill until partially set. Add the chopped walnuts and pour into a mold. Top with Cool Whip or topping of your choice. *Note: For the clubhouse dinner, the wine was replaced with ½ cup cold water. The walnuts were left out but replaced with chopped celery for crunch. This recipe was made in a 9x13 pan. Layered Pear & Cream Cheese Salad Recipe from Linda Wight (Christmas Dinner) 1 16-ounce can pear slices or halves, undrained 1 6-ounce package lime Jello 1½ cups cold ginger ale 2 tablespoons fresh lemon juice 1 8-ounce package cream cheese, softened ¼ cup chopped pecans Drain pears, reserving all liquid. Chop pears and set aside. Add enough water to reserved juice to make 1 ½ cups liquid. Bring to a boil in a small pan. Stir boiling pear juice/water into gelatin and stir at least 2 minutes until completely dissolved. Stir in the cold ginger ale and lemon juice. Pour 1 cup of Jellow into mold. Refrigerate about 30 minutes, or until slightly thickened. Arrange some of the chopped pears in mold by pushing into gelatin. In a large bowl, whip softened cream cheese until fluffy. GRADUALLY add remaining gelatin to cream cheese and whisk until well blended. Refrigerate 30 minutes or until slightly thickened. Stir in remaining pears and pecans. Spoon over gelatin layer in mold. Refrigerate 4 hours or until firm. Unmold to serve. Note: For clubhouse dinner, a 9x13 pan was used instead of a mold. The pecans were left out. The Jello-cream cheese layer was put into the pan first, then topped with the clear green Jello layer. Grape Salad Recipe from Ann Bricker (January Ladies Luncheon) 2 pounds seedless green grapes 2 pounds seedless red grapes 1 8-ounce package cream cheese, softened 1 cup sour cream 1 cup white sugar 1 teaspoon vanilla Mix the grapes together in a large bowl. In another bowl, beat the cream cheese until smooth. Add the sour cream, sugar and vanilla and mix well. Pour over grapes and mix all together. Refrigerate overnight. When ready to serve, sprinkle top of salad with about ¾ cup brown sugar and ¾ cup chopped pecans (optional). 11
