Tasty dips quick to prepare Curry sauce (approx. 12 portions) 140 g apple purée 1 tsp white balsamic vinegar 3 tsp rapeseed oil 1 tsp mustard ½ tsp turmeric 1½ tsp curry powder 1 tsp tomato puree ½ tsp salt ½ tsp pepper 20 ml apple juice A sprinkling of chilli flakes (optional) Sweet-and-sour sauce (approx. 12 portions) 140 g apricot jam ml pineapple juice 1 tsp rapeseed oil 3 tsp white balsamic vinegar 2 tsp tomato ketchup ½ tsp pepper 2 tsp honey 1 tsp salt Combine the apple purée with the mustard, tomato purée, rapeseed oil, and vinegar. Add the spices and apple juice. Mix to a creamy consistency with a hand-held blender. If the dip is too thick, stir in a little extra apple juice to make it more creamy. Combine the apricot jam with the rapeseed oil, vinegar, and tomato ketchup. Add the honey and pineapple juice. Stir thoroughly. Season with salt and pepper. Purée with a hand-held blender to produce a creamy, fluffy dip. 15
