1 OMAKASE by TEISUI What is OMAKASE Omakase is short for omakase shimasu, which roughly means I trust you, [chef]. For an experience built on trust, the customer must feel comfortable and open to new experiences. Omakase is a traditional Japanese dining style in which the chef provides a meal tailored to your preferences based on availability, budget, taste, and seasonality. In Japan We say "itadakimasu" ("I gratefully receive") before eating, and "gochisosama (deshita)" ("Thank you for the meal") after finishing the meal. Also, when you would like to say so delicious you can say So Oishi!!!!!!! We will be happy for sure. Why our sushi rice has a brown color? This is because we mix the rice with red vinegar. Red vinegar (Also known as Akazu) is made using sake lees which is the yeast slurry left over from sake production. It is considered by many to be the vinegar of choice for traditional Edomae (Tokyo style) sushi. It brings a deep, flavorful, and refreshing taste full of umami to sushi rice. It also has many health benefits. Some of the many benefits include a stronger immune system, increased physical energy, body fat combustion, heightened concentration, and skin and hair beautification. Kosher Omakase is Available

2 Sushi Omakase Etiquette: Do s and Don ts How to Enjoy Sushi :) Do s (or Don t up to you) Do eat nigiri in one bite to enjoy the perfect harmony of fish, rice, and wasabi. If you bite halfway, the balance will be lost. Do enjoy the pickled ginger as a palate cleanser. Eat it between different kinds of nigiri. Don t eat the ginger in the same bite as nigiri. Do dip your nigiri into soy sauce fish-side down otherwise, the rice may fall apart. Do drink sake. Of course, sake is a natural option. Pairing sushi with a sake which have most well-balance and clean finish if you re more interested in wine, something with high acidity is good, like a sauvignon blanc. Do buy the sushi chef a drink. Any time you like you can offer them beer, wine, or sake. It s a way to show appreciation and build rapport. Don t try and make the chef drunk! A couple one glass is fine. Don ts (or do, up to you) Don t be afraid. Dining at a sushi bar is a great opportunity to try new things and learn more about sushi. Do ask questions, the chef will be happy to talk to you. Although he is not very good at speaking in English lol Don t expect a quick meal at the sushi bar. Don t rush a meal or a chef. The sushi bar is the place for people to enjoy sushi where else can you watch the chef make your meal and talk to them at the same time? Do take your time and enjoy interacting with the chef. Don t ask what s fresh today. We have all heard this before: "OMG the o-toro was so buttery melt-in-my-mouth and so flavorful! It was soooo fresh I'm sure it was swimming this morning!" Uh... no. Fun Fact: If served too soon after the catch, many fish (tuna included) will have very little taste, with no umami flavors present, and will also have an unpleasant, tough and chewy consistency. Most white fish benefit from two or more days of aging, again depending on factors such as fat content and size.

14 SHOCHU 焼酎 - MUGI (barley) - 麦 Iichiko いいちこ Oita / This is a very light, easy drinking spirit with no strong mouth feel or aftertaste. The relatively low alcohol content makes it much smoother, which may be explained by the spring water they use, or perhaps they polish their barley to a greater degree.
