2 EMPLOYEE OF THE MONTH: March 2011 ERICA DONES The Athenaeum s wonderful dining experience and genuine hospitality starts just before you reach your table. Upon arrival you are greeted by name, welcomed to our Main Dining Room, and escorted to your preferred dining space. More often than not, this gracious host with the warm and friendly smile is Erica Dones. Erica has been welcoming members and guests of The Athenaeum since Her dependability during lunch and dinner service, as well as reliability in making sure our holiday event seating runs smoothly has proven to be a great asset to The Athenaeum and a true value to our members. Erica joined The Athenaeum team from previously working at Villa Gardens Retirement Community. The transition was one that was comfortable and rewarding, as she has enjoyed continuing to see and serve many familiar faces here. In her free time, Erica enjoys spending time with her family and going dancing with friends. She and her husband are celebrating their second wedding anniversary this month and reside in Pasadena. When asked about her favorite aspect of her job, Erica shared that she loves the holidays at The Ath, especially at Christmas time. The opportunity to meet many members families is the most rewarding part of all, along with the beautiful decorations and seeing her guests' excitement. Congratulations Erica! Marisu Jimenez General Manager (Marisu s Message Corner) Springtime at The Athenaeum is in full bloom. The kitchen s herb garden has recently been renovated and replanted to bring our dishes the freshest, home-grown seasonings. Our West Patio is an inviting lunch destination as the forecast is warm and sunny. Get your apron and bring the sunglasses as this month s cooking class is moving out doors for some barbecuing fun. And maybe most important, the opening of our perennial Rath Al Fresco will soon be here. We encourage you to come and sample our new spring 2011 menus as they have recently debuted. Chef Kevin has composed innovative lunch and dinner menus that will be delicious with many seasonal delicacies. Whether the Grilled Asparagus with Parmesan Pudding, Fig Balsamic Glazed Free Range Chicken, or the Panchetta Wrapped Pork be your endeavor of choice the selection will be a great one and there will be a reason to dine with us continually to try something new. From something new to bringing back a timeless favorite for Mother s Day, The Athenaeum s afternoon tea is the perfect way to break from the hustle and bustle and to treat the extraordinary lady in your family. And be sure to count the family for a reservation at our Mother s Day Brunch as the buffet will be a tempting feast for all the senses. May is also the time we celebrate numerous graduations, weddings, reunion gatherings, retirement parties and the list continues. In honor of The Athenaeum s 80th Anniversary, let us be the setting to host your significant memories and milestones. We continue to bring you flavors from around the world this month. Adding to the Mexican fare of Cinco, our Latin-inspired cuisine will ignite the palate at our Tequila Dinner, sample the sophisticated selections from the north-west peninsula of the French region of Brittany, or try the culturally-infused signature dishes of the Caribbean at our International Nights. And finally, it s officially spring as Rath Al Fresco is back on Friday, May 20th. With 20 days remaining in our countdown, the finishing touches are being made to a menu that is fully-loaded. Order up a tasty starter to share, such as our Macaroni and Cheese Bites; then it s every man, woman, and child for themselves as there are entrées for each diner's inkling. Zesty Mushroom and Roasted Chili Quesadillas, satisfying Lamb and Beef Gyros, Sesame Crusted Chinese Chicken Salad, the mouth-watering Kobe Burgers, to only name a few. And if dinner in the most beautiful location in Pasadena at sunset this time of year just leaves you wanting more, add a savory Mud Pie for dessert and mark the calendar for Rath Al Fresco dining all summer long. Caltech Playreaders: TUESDAY, MAY 3 / 8:00 p.m. Green Fire: A Melodrama of 1990 by Glenn Hughes Adapted from the novel by John Taine [Eric Temple Bell] Directed & Introduced by Doug Smith Caltech abounds in scientists and engineers but not many novelists. Mathematician Eric Temple Bell was one of those exceptions. Writing under the name John Taine, he was lauded as a master of science fiction. In Green Fire, a brilliant humanitarian professor struggles to the death with a Napoleonic master of evil for control of the world. It s great fun to glimpse what our present day looked like from the late 1920s and see who wins the epic battle. All members of the Caltech / JPL community are welcome. 3 Executive Chef Kevin s Recipe Corner Grilled Thai Beef Salad Ingredients 2 limes, zest and juice 1 Tbsp brown sugar 1 Tbsp fish sauce 2 tsps sesame oil 1 tsp soy sauce 2 tsps ginger, minced 1 garlic clove, minced 1½-2 lbs. beef skirt steak or London broil 1 pint grape tomatoes, halved 1 hot house cucumber, halved lengthways, thinly sliced diagonally 1 red onion, cut julienne 1 jalapeno, seeds removed, thinly sliced 1 bunch mint leaves, large leaves torn 1 bunch cilantro leaves 1 bunch basil, large leaves torn ⅓ cup toasted peanuts or cashews, coarsely chopped 2 kaffir lime leaves, center veins removed, finely shredded Directions 1. In a bowl, whisk together lime juice, brown sugar, fish sauce, sesame oil, soy sauce, ginger and garlic. Place the steak in a glass or ceramic dish. Drizzle with half the dressing. Cover with plastic wrap and place in the fridge for 2 hours to develop the flavors. 2. Preheat a barbecue grill or chargrill pan on high. Cook steak on grill for 2-3 minutes each side for medium or until cooked to your liking. Transfer to a plate. Cover with foil and set aside for 10 minutes to rest. 3. Place the tomato, cucumber, onion, jalapeno, mint, cilantro, basil, nuts and lime leaves in a large bowl. Thinly slice steak across the grain and add to the salad. Drizzle with remaining dressing and gently toss to combine. Divide salad among bowls and serve immediately. Enjoy Cooking!
