Market Report up until February 205 All percentage changes in this report refer to month-on-month price changes and are provided by Mintec. FX Rates Currency against Sterling Opened December Closed December Dollar Euro Soft Commodities Sugar prices continued to fall driven by large global supplies. Prices were down on LIFFE (-4%). Cocoa bean prices rose on both ICE (+2%) and LIFFE (+3%) driven by concerns about adverse weather in Ivory Coast. Cocoa butter was up slightly (+%), but prices for cocoa powder have fallen (-%). Oils & Fats Soyabean oil prices fell in the US and Rotterdam (-4%) as good weather during the growing period resulted in soyabean production increasing 0% y-o-y to 32.9m tonnes in 204/5. Palm oil prices fell in Rotterdam (-8%), driven by good supply prospects. Rapeseed oil prices fell in Rotterdam (-2%), due to good production prospects from the EU. Early January has seen increases, in Sterling terms, for all the oils complex as the FX rate against Dollar has fallen to around.5. Coconut oil prices fell in the Philippines (-3%) and Rotterdam (-2%). Extra virgin olive oil prices continued to rise in Spain (+6%), due to drought conditions. Lampante olive oil prices rose (+6%) in Spain. Grains Prices for milling wheat were up slightly up (+%) on LIFFE Paris, due to the lower availability of good quality milling wheat in Europe. Global wheat production is set to rise % y-o-y to 722.2m tonnes. Ingredients US almond prices have settled after rising (+2%) on the back of a reduced crop. Spanish almonds are also up (+2%). Turkish sultanas increased (+7%) as the availability of decent quality product becomes tight combined with a falling exchange rate against Dollar. EU butter prices rose slightly in the UK (+%). Butter prices have remained stable in New Zealand (0%). SMP prices in the EU continued to drop (-%), however in the UK prices rose (+9%). WMP prices in the EU also fell (-%). EU egg prices continued to increase (+3%), while processed egg prices in the EU remained stable (0%). Prices for petrol (-25%) and diesel (-8%) fell in Europe in line with crude oil prices. 3 205 Baking Flavours and Trends I thought this month I would get my crystal ball out and look into what flavours and trends could be popular in baking for 205. Gluten Free certainly played a big part in the development of products during 204 and consumers are continuing to look for more products to help them live a healthier lifestyle without giving up their favourite treats. One suggestion is fermented products which are believed to aid digestion, this includes anything from pickles, sauerkraut, yoghurt or the more exotic kimchi (a Korean speciality of fermented vegetables) which are all predicted to be big sellers this year. It is worth remembering fermentation is also the process by which bread is leavened and therefore, valuable to mention in your marketing, in addition to any other health benefits. Whoever said bigger is better couldn t be more wrong as 205 is set to be the year of the miniature, tying into the trend to eat healthier, expect portion sizes to reduce and anything that can get smaller will. Natural flavours will continue to grow and develop with alternative sweeteners such as honey becoming a big part of baked products. Honey is a natural product and replaces the vast majority of sugar and is thought to aid in both digestion and skincare, so expect this to be big in the coming months. Following the world cup where the British public embraced flavours from Brazil, a few more exotic flavours from the continent are set to tickle our taste buds in 205. Tart and sour flavours are expected to be prominent with fruits like sour cherries, grapefruits and lemons being used more regularly. Savoury flavours are also expected to creep into our traditionally sweet products such as chilli and ginger, which certainly aren t new to baked goods, but expect these to be used with more vigour and prominence. The other surprising flavour is smoke, including products like bacon, burnt caramel and toffee! I m sure you all have plenty of fantastic ideas of your own but I hope this has helped inspire you for the year ahead.
