4 2017 is a very special year for Total Foodservice as it is the 50th Anniversary of the Company. To celebrate I wished to do something special when shooting this year s Christmas brochure. Planning of the shoot began with my love for the Lake District. Having driven past Grey Gables many times, the location of the shoot, and having admired the light, design and location of the house, it seemed the ideal place to celebrate Christmas. Paul, Steve and Joe (our team of chefs), Rachel (our marketing executive) and Sophie (our photographer) have worked extremely hard to bring you inspiration for your Christmas menus. Topped with a goats cheese sauce and goats cheddar shavings. DUCK LIVER PÂTÉ WITH ORANGE, COINTREAU & VINCOTTO gm Duck livers, orange zest and Cointreau are all blended to produce this robust but fine flavoured pâté. The richness is offset by the addition of sweet, malty orange vincotto. Served with... ONION MARMALADE kg A The original English onion marmalade and still the best. 7

36 This was my first Christmas shoot at TFS, it certainly had the wow factor. We had a few long hard days in the kitchen but with such an incredible setting to prepare the festive range it was a truly amazing experience.
