2 2 General Rules and Conditions Eligibility. All exhibits must be bona fide property of the Exhibitor and have been grown or created by the Exhibitor as a hobby. An article entered at a previous Thame Show is ineligible for entry in this year s show. Entry Forms. All entries must be on the official entry form included with this schedule; please photocopy if you need additional copies. One form per exhibitor please. Entry forms, with the correct entry fees, should be sent to the Thame Show office at 55 North Street, Thame, Oxon. OX9 3BH to be received by no later than Friday 29th August Entry Fee. The Entry Fee is 1 per entry - 6 or more 50p Only one entry per exhibitor per class. Judging. All exhibits must be staged and ready for judging at 8.30am on the day of the Show. Classes will be closed to the public and exhibitors during judging which is anticipated to be completed by 10.30am. Points Calculations. Points that contribute to a Show Trophy will be calculated at: 1st prize - 5 points, 2nd prize - 3 points, 3rd prize - 1 point. Removal of Exhibits. Classes will be closed to the public at 5pm; no exhibits may be removed before this time. Exhibits not removed by 5.30 pm will be disposed of. Prize Money. All classes (except otherwise stated). 1st ; 2nd ; 3rd - 1. Prize money will be paid at the Steward s desk between 4.30pm and 5pm. Cups and Trophies: These are awarded annually and must be collected from the Cup Steward on the day of the show. Winners hold them for a year at the risk of the winner and must return them in good order before 31st July following the year of the win. 8 10 Cookery & Preserves Recipes Oven temperatures are for guidance only and must be adjusted for fan ovens - Use imperial or metric measures - do not mix * GLUTEN-FREE LEMON DRIZZLE - Class D089 * 170g butter 170g gluten and wheat free self-raising flour, sieved 250g caster sugar 2 lemons, zest and juice 2 large eggs 25g demerara sugar 2 tablespoons milk 1tsp vanilla extract Method: Heat the oven to 180 C (350 F) gas mark 4. Lightly grease and line a 18cm/7inch loaf tin. Beat butter, 170g caster sugar and vanilla extract for 2-3minutes or until light and fluffy, add the eggs and lemon zest continue to beat for 2-3 minutes, add the juice of half a lemon, milk and beat to combine. Add the sieved flour and gently mix to combine. Spoon the mixture into the tin and tap the cake tin gently a few times on the counter top to flatten out the top. Bake for minutes or until a skewer comes out clean. Meanwhile, gently heat remaining lemon juice and 80g caster sugar in a small pan to dissolve and allow to reduce to a syrupy consistency over a medium heat for 2-3 minutes. Remove the cake from the oven and prick all over with a fork, carefully spoon the hot lemon syrup over the cake and finally sprinkle over the demerara sugar. Leave the cake in the tin for 20-30minutes to allow syrup to settle. Remove the cake from the tin onto a wire rack and allow to cool. * GINGER CAKE - Class D092 * 100g/4oz margarine 225g/8oz plain flour 175g/6oz black treacle 50g/2oz caster sugar 50g/2oz golden syrup 1 teaspoon mixed spice 150ml/¼ pint milk 1 teaspoon bicarbonate soda 2 large eggs, lightly beaten 2 teaspoons ground ginger Method: Grease and line a 18cm-20cm (7-8 ) square cake tin. Put the margarine, treacle and syrup into a saucepan and heat gently, stirring from time to time, until the margarine has melted. Remove from the heat, add the milk and allow to cool (about 5-10 minutes), add the beaten eggs. Sieve the dry ingredients together into a mixing bowl. Add the treacle mixture and beat well together. Pour into the prepared tin and cook in a moderate oven, 170 C (325 F) mark 3, for 1¼ to 1½ hours. Turn out of the tin and cool on a wire rack. When quite cold, store in an airtight container. * HONEY FRUIT LOAF - Class D099 * 150g/5oz self raising flour 60g/2oz castor sugar 90g/3oz sultanas 1 egg 30g/1oz butter or margarine 75g/2½oz clear honey 1 tablespoon milk ½ level teaspoon ground cinnamon Method: Grease and line a 1lb loaf tin. Sieve the flour and cinnamon. Add sugar and fruit. Melt the butter or margarine with the honey over a low heat and stir into the dry ingredients with beaten egg and the milk. Mix well and pour into the greased and lined 500g/1lb loaf tin. Bake at 150 C /300 F/Gas mark 2 for about 1 hour. * PASSION CAKE - Class D097 * 300g / 10oz plain flour Frosting 175g / 6oz soft brown sugar 75g / 3oz soft butter 50g / 2oz chopped walnuts 75g / 3oz cream cheese 175g / 6oz grated carrots ½ tsp vanilla essence 175ml / 6fl ozs corn oil 175g / 6oz icing sugar 1 tsp bicarbonate soda chopped walnuts for decoration 3 eggs 1 tsp salt 2 tsp baking powder 2 ripe bananas (mashed) Method: Sift flour, bicarbonate of soda & baking powder into a bowl. Add sugar, chopped walnuts, eggs, bananas and grated carrots. Finally add the corn oil. With a wooden spoon mix ingredients together and beat well for one minute to get a soft cake batter. Divide cake batter equally between two greased and lined 8inch/20cm cake tins and spread. Place in the centre of the oven at 180 C (350 F) gas mark 4, for 40 minutes. Remove and cool. Frosting Put soft butter, cream cheese, sifted icing sugar and vanilla essence into a bowl, beat well until soft and creamy. Sandwich layers with a little frosting and spread the remainder over the top and sides. Sprinkle with finely chopped walnuts. 350g/12oz sugar 75g/3oz butter * LEMON CURD - Class D106 * 4 eggs rind and juice of 2 lemons Method: Melt the butter in a double saucepan (or basin stood in a saucepan of boiling water). Add the lemon juice, sugar and thinly peeled lemon rind. Stir until sugar dissolves. Beat the eggs lightly in a basin (not frothy) and add to the other ingredients. Continue to stir until mixture thickens. Pour into warmed jars using a sieve to remove the peel. 175g/6oz butter/margarine 175g/6oz caster sugar 100g/4oz cherries cut into quarters A few drops of almond essence * ALMOND AND CHERRY LOAF - Class D093 * 225g/8oz self raising flour 25g/1oz ground almonds 3 eggs Method: Cream the fat and sugar until light and fluffy, beat in the eggs one at a time, stir in the flour, add the cherries, ground almonds and almond essence. Put into a 900g/2lb loaf tin and bake for 1-1½ hours at 170ºC (325ºF) Fan 150ºC mark 3. Turn out and cool on a wire rack *APPLE CAKE - Class D100 * 1l0g/4oz butter 225g/8oz plain whole meal flour 175g/6oz soft dark brown sugar 450g/1lb cooking apples peeled, cored & chopped 2 eggs beaten 1 tsp mixed spice 1 tsp cinnamon 2 tsps baking powder 3-4 tbs unsweetened apple juice 2 tbs demerara sugar Method: Grease and line 7"/18cm round cake tin. Cream butter and sugar until pale and fluffy, add eggs a little at a time beating well after each addition, add flour, spices and baking powder - mix well. Fold in the apples and enough apple juice to make a soft dropping consistency. Turn mixture into a prepared tin and sprinkle with demerara sugar. Bake at 170 C (325 F) Fan 150 C gas mark 3 for 1¼ -1½ hours until well risen and firm to the touch. Turn out and cool on a wire rack.. 11
