13 TIPS FOR PRESERVING Please read the following advice given by our WI judge before making and presenting your preserves. LIDS - do not reuse lids, they absorb smells and colour from the original preserve. Use waxed discs and cellophane for jams, jellies and marmalade and new, plastic lined, metal lids for chutneys to give a good seal. It is not necessary to use waxed discs and/or cellophane in addition to a metal lid. Fabric covers make a pretty addition. LABELS - always label the jars with the full date to include, day, month and year. Unusual chutneys/jams should have a list of ingredients on a 2nd label on the back of the jar. Please state if it has a fiery kick. FLAVOURS - choose ingredients to compliment each other with no single ingredient dominant. Chutney/vinegar preserves should be left 2-3 months for the flavours to develop but if kept for more than 12 months it will dry out, separate and taste unpleasant. TEXTURE - the fruit in marmalade must be softened before the sugar is added. Tough fruit and seeds can detract from the final product. APPEARANCE - Fruits should be evenly distributed, allow the mixture to cool slightly before bottling to prevent it rising to the top. FRUIT CURD should have a breathable lid like a waxed disc and cellophane NOT metal. It should be kept in the fridge and made within 3 weeks of the Show. Trophies will be presented at 4.00pm 12

15 TIPS FOR PHOTOGRAPHY Our Photographic judge from the North Cheshire Photographic Group would like to share a few tips when taking photographs for competitions. Keep it simple. Competition winners are frequently very simple photographs. Get down low and shoot from the eye line of your subject. Avoid cluttered backgrounds especially those with bright highlights. Take care with composition and be sure there is a point of focus in your image. If you re shooting landscapes do it within an hour of sunrise/sunset. With portraits, engage with your subject and get good eye contact. Good post processing in the computer is as important as taking the photograph. A good photograph is one that produces an emotional response in the viewer. Never go out without a camera your best shot may be today. You are producing art - don t expect everyone to enjoy your work! Trophies will be presented at 4.00pm 14

18 WINE RECIPES FRUIT LIQUEUR 1 x 75cl Gin or Brandy or Vodka 1-1 1/2lb fruit 1lb sugar large, wide necked jar Prick the fruit all over and place in the jar with the rest of the ingredients. Gently shake the jar every couple of days to encourage the sugar to dissolve. When fully dissolved, remove the fruit and siphon the liquid into clean, sterile bottles, avoiding the sediment. Liqueur can be drunk immediately but improves if left to mature. APPLE WINE; dry 3 litres apple juice (100% pure) 1 bag of sugar 1 tsp pectin/pectolase 2 Campden tablets. 1tsp yeast nutrient 1/2 tsp acid 1/2 tsp tannin 1 sachet of general purpose yeast Pour the apple juice into a demijohn, add 1 crushed Campden tablet and pectolase, shake until combined and leave for 1 day. Dissolve the sugar in 1 pint of boiling water and add to the demijohn, top up to 1 gallon with cold water. Add yeast nutrient, acid and tannin and then the yeast. When fermentation has finished rack off into a clean demijohn and add the 2nd crushed Campden tablet. Leave to clear then rack off again into another clean demijohn making sure not to disturb the sediment. This wine can be drunk straight away but will improve if left for 2 months. MAKE SURE ALL EQUIPMENT IS CLEAN 17

19 ELDERBERRY WINE; dry 3lb elderberries 2 ripe bananas 1 tsp Pectic enzyme 2 Campden tablets 1 tsp citric acid 1 tin red grape concentrate 1 tsp yeast nutrient Vitamin B1 tablet 1 sachet of Burgundy yeast 1 kg sugar Squash the berries, mash the bananas and pour two pints of very hot water (NOT BOILING) over them to cover and leave overnight. Add pectin enzyme and 1 Campden tablet and leave for another night. Add all the other ingredients EXCEPT the sugar and ferment in a bucket for 3 days. Strain off the liquid into a demijohn, dissolve the sugar in 1 pint of boiling water and add to the demijohn. Top up with water to make 1 gallon. Fit an airlock and ferment out. When fermentation has finished, siphon off the liquid into a clean demijohn, leaving behind the sediment. Add the 2nd crushed Campden tablet and shake well. Leave to clear and mature for 6 weeks, it can be drunk when cleared but better when allowed to mature.
