1 CULINARY ACADEMY SUMMER KIDS & TEENS COOKING CAMP SCHEDULE The objective of our summer cooking camps for both kids and teens is for them to learn to cook. The classes are designed to be fun and educational. The menus are carefully prepared to enable children learn various cooking techniques and methods that go into the preparation of foods. They would also learn product and kitchen tool identification, kitchen hygiene and safety as well as dining etiquette. A day would be reserved for Market excursion to learn more about produce, storage and purchase. Each day, students work in small groups to prepare the day s menu. At the end of class, children sit down together to eat the foods they have prepared. Children are allowed to take away the foods they have prepared with the exception of raw foods or foods containing raw cream and raw eggs, due to health and safety precautions. GENERAL INFORMATION The Summer camp lasts for 4 weeks and runs from June 23rd to July 25th with a one week break in between from July 14th 24th at a total of 12 classes and costs N90, 000(Ninety Thousand Naira Only)per student. If you don t want to go the whole stretch, you can choose any of the 2- week stages for N45, 000 (Forty Five Thousand Naira Only) each or you can choose individual classes for N8, 000 (Eight Thousand Naira Only). GTBank Culinary Academy Limited Parents/Guardians booking for 3 or more wards shall receive a 10% discount on the entire booking. Culinary Academy s Kid s (Kitchen Adventure Camp) & Teen s (Culinary Experience Camp) Summer Cooking Camp is designed for kids ages 6 12 and teens ages Morning and afternoon sessions are offered 3 days per week, Mondays, Wednesdays and Thursdays. Kids meet in the mornings from 9:00 am 12:00 pm while teenagers meet in the afternoons from 1:00 pm 4:00 pm. Camp is held at 15b Bayo Kuku Street, off Gerard Rd. Ikoyi Lagos.
2 CANCELLATION POLICY No refunds will be provided for missed classes. Refunds will only be made where a class is cancelled by the school. The school reserves the right to cancel classes or alter teaching schedules and menu. DRESS CODE: Students should be dressed both comfortably and safely with closed toe shoes (sneakers, clogs, crocks, etc.). Culinary Academy prefers not to allow campers to wear the following items: Open toe shoes such as sandals or flip flops Tank tops with drawstrings or shirts with loose sleeves Rings, bracelets, watches, long earrings and necklaces/chains. Frills from torn out jeans Students should bring writing materials. Handouts, all cooking produce and materials shall be provided by the school. ALLERGIES: Culinary Academy cannot guarantee a nut-free environment. If you child has an allergy, please describe it in detail with your registration. Severe allergies will be handled on a case-by-case basis. Please review the menus, as Culinary Academy may not be able to make menu substitutions. PICK UP & DROP OFF: Children must be picked up promptly after camp. Students should be dropped off no earlier than 30 minutes prior to their camp start time. Classes will start at advertised time so latecomers might miss out on some parts of the instructions. Menus printed in camp schedule are subject to change without notice. Classes are co-ed and limited. The classes are held by different chef Instructors.

They will also be introduced to the Kitchen, working safely, food hygiene. This class will be concluded with an excursion trip to a Farmer s market and a grocery store. Inventing the wheel Wednesday 25th June 2014 from 9am-12Noon Duchess Potatoes, Chicken strips, Carrot cupcakes In this class we are getting rid of Chicken and chips, making way for the fancy stuff and adding a mini dessert. Hello Nigeria Thursday 26th June 2014 from 9am - 12 Noon Beef stew, Steamed Rice, Chocolate chip cookies Hang up your aprons Mummies we can now make dinner! Today we are leaning to make the perfect beef stew with steamed rice and our reward is the so yummy chocolate chip cookies. Sunday Lunch Monday 30th June 2014 from9am - 12 Noon Jollof Rice, Vegetable Salad, Salad dressing, Puff Puff We will be learning how to make the perfect Jollof Rice, Salads and we ll be throwing out that bottle of salad dressing in the fridge because we re learning how to make our very own. What better way to round off the day than have some very hot and pillowy puff puff. Yum.
4 Breakfast - who Goesn t love you? Wednesday 2nd July 2014 from 9am - 12 Noon Pancakes, French Toast, Eggs How do you like your eggs? It doesn t matter because we re teaching it all and serving it with America style Pancakes and Yummy cinnamon French toast. Snack time Thursday3rd July 2014 from 9am - 12 Noon Mince pies, Chicken wings, Banana Ice cream We would be learning to make scrumptious meat pies, sticky chicken wings and Quick Banana Ice cream for days when our friends come to play. STAGE 2 JULY 14 th to JULY 24 th More Snacks Monday 14th July 2014 from 9am - 12 Noon Corn & Chicken soup, Chicken satay with Peanut sauce, Brownies... and then there are those days we just want to have a light meal, so today is soup day and chicken kebabs with a healthy peanut sauce but sorry we still want our chewy brownies so we ll be making those too. Meat Fiesta Wednesday 16th July 2014 from9am - 12 Noon Whole Roast Chicken, Meatballs, Cinnamon Caramelized Pineapple Who doesn t like roast chicken? We would be learning how to roast a whole chicken with different types of seasoning, make Meatballs and then because no fruit tastes as yummy as when its grilled, we will be having Caramelized fruits for desserts. Dolce Vita Thursday17th July 2014 from9am - 12 Noon Pizza, Spaghetti Bolognese, Fruit salad Every night is Pizza Night except when its Pasta night and we ll be good today and have some fruit salad.
5 Nice and Naughty Monday 21st July 2014 from 9am - 12 Noon Braised Vegetables, Macaroni & Cheese, Vanilla Sponge Cake We ll eat our veggies but you ll have to let us have our Mac and cheese and then we ll bake you a lovely cake for the next mothers day. We promise. Pardon moi - Etiquette Class Wednesday 23rd July 2014 from 9am - 12 Noon Our etiquette class introduces the kids to setting the table, good table manners and using the appropriate crockery, flat and stemware. The final Adventure Thursday 24th July 9am - 12 Noon We re sorry to come to the end of camp but we ll celebrate the end with mashed potatoes, Lamb chops and very luscious smoothies. Oriental Express Wednesday 25th June 2014 from 1pm - 4pm Knife Skills Stir Fried Chicken and Vegetables with Egg Noodles In this class, Students would be taught knife skills, different types of knives, uses and care for knives. They would also learn the names of different kind of cuts. They would go on to de-bone chicken and make a classic Chinese stir-fry with the chicken and vegetables.
6 Hot soup! Thursday 26th June 2014 from 1pm-4pm Egusi Soup, Ogbono Soup, Pepper soup. You asked and we shall deliver, mothers always want their children to learn traditional Nigerian soups and in this class we w ould be teaching Egusi Soup, Ogbono Soup and Pepper soup. Students would also learn to turn out the perfect accompanying Pounded Yam. irep Naija Monday 30th June 2014 (Teens)1pm-4pm Jollof Rice, Deconstructed Vegetable Salad, Salad dressings, Puff Puff In our i Rep Naija class, we would be learning how to make Jollof rice. In addition, a fun build your own salad workshop would be held where students would be able to build their own salad incorporating and learning about produce that taste better when combined. Students would also learn how to make 2 different types of salad dressing and what is a Nigerian menu without puff puff? What s for breakfast? Wednesday 2nd July 2014 from1pm-4pm Bacon and sautéed onion Quiche, Cheesy Omelets, Akara, Fruit tart We love having a spread of variety foods for breakfast and this class spans across different cuisine. No breakfast memory is complete without Saturday morning Akara breakfast or Sunday morning omelets. Swirls and Twirls Thursday 3rd July 2014 from1pm-4pm Deviled Eggs, Duchess Potatoes, Berry Pavlova This class is all about piping techniques, students would be taught to work with piping bags and different tips while learning how to fill deviled eggs, dainty duchess potatoes and a meringue nest for berry pavlova. STAGE 2- JULY14th to JULY 24th Lagos Party Time Monday 14th July 2014 from 1pm-4pm MoinMoin, Beef Stew, Moist Chocolate cake covered with a chocolate ganache. No Lagos Party is complete without moinmoin, beef stew and a decadent dessert. As a further introduction to cooking Nigerian food, students would be taught steaming techniques by making moinmoin in traditional Nigerian leaves, and a delicious beef stew. For desert, students would learn how to bake a moist chocolate cake smothered with chocolate ganache.
7 Let s meet for lunch Wednesday16th July 2014 from 1pm-4pm Chicken Noodle Soup, Lasagna, Caramelized Fruits Today we would be teaching a full three-course meal with chicken noodle soup as an appetizer, then we are off to Italy for Lasagna and finish it off with cinnamon caramelized pineapple and whipped cream. Yum! It s a cook-over then sleepover Thursday 17th July 2014 from1pm-4pm Pepperoni Pizza, 2 Whole Grilled Chickens, The perfect meals to make on sleepover night. floured up, roll out dough and bake pizza. Students cue and mixed spice flavors then they would bake perfect for the sleepover munchies. Vanilla Sponge Cake Students would learn to get their hands would also grill whole chicken in barbeand decorate a vanilla sponge cake. All Motherland class Monday 21st July 2014 from 1pm-4pm Yam Pottage, Efo Riro, Fish Stew Students would deepen their knowledge of Nigerian cuisine with these foods that do not represent everyday cooking but are great to add to their cooking skills. Pardon Moi - Etiquette Class Wednesday 23rd July 2014 from1pm-4pm Our etiquette class introduces students to setting the table, eating properly, good table manners and using the appropriate crockery, flat and stemware. On a sweet note... Thursday 24th July from 1pm-4pm Dulce Leche Ice cream, Shepherd Pie, Orange Braised Vegetables This last class in summer camp would end on a sweet note, as students would learn to make a caramel swirl ice cream and sweet orange braised vegetables. They would wrap up their cooking class tales in a hearty shepherd pie.
