4 Crêperie how we are different Today you can buy industrially produced pre-packaged crêpes in every supermarket ready mix powder pasteurized eggs Crêperie refuses this completely! Bio?Logic! Organic We take great care to source our organic products locally! 5 Everybody can make crêpes! Making good crêpes is a fine art! 5

6 Gallettes and Crêpes 1) Ingredients: Crêpes: Our crêpes are made with wheat flour, milk, fresh eggs and cream. For sweet crêpes we add sugar and organic Bourbon vanilla. Galettes*: Our galettes are made with buck wheat flour (farine de sarrasin), sunflower or olive oil, salt and water. 2) Preparation: Crêpes: A crêpe is cooked on both sides. The preparation time is only 1 2 minutes per crêpe. Galettes*: A galette is cooked on one side only and is filled and then folded. The preparation time is about 3 4 minutes per galette. *Gluten and lactose free 6

7 3) Flavours: The difference in taste between crêpes and galettes can be described as the difference between pancakes and wholemeal bread. A galette is lighter than one of our really rich crêpes! A galette is crunchier because the cooking time is much longer. Crêpes are either sweet or savoury, galettes are always savoury. Because of the difference in taste our fillings are carefully chosen to complement this. If you d like a first-class. three course meal which satisfies your appetite we recommend a galette as a starter and main course and a crêpe as a dessert. 7

8 4) Time schedule: For a large number of guests with a small number of courses we recommend a Crêpemenu. For meals of more than 3 courses we recommend a Galette menu as it is less filling. The meal is more leisurely as Galettes take longer to prepare. Here are some examples of preparation times for different menus. Example 1 (Celebration-Menu) Number of persons: 30 Menu: Crêpes (2 savoury + 1 sweet) Courses: 3 Preparation time: 1 hour Naturally the meal will last more than one hour! 8 TTi imee iss i moorree tthhaann moonneeyy!!

9 Example 2 (Gourmet-Menu) Number of persons: 10 Menu: Galettes + Crêpes Courses: 7 (2 starters+3 main courses+2 desserts) Preparation time: 2 hours Delight your senses Naturally the meal will last more than two hours with the right drinks and conversation. Sitt bbaacckk aann dd rreel laaxx!! 9

11 Invitation into a new experience Crêpes and Galettes are best eaten straight from the "bilig" (griddle). As each is prepared individually your meal is naturally informal. No "standing on ceremony" waiting for everyone to start! As soon as your plate arrives - Bon Appetit! 11
