FOUNDR S PROFIL In Japan, there are more ramen restaurants than any other kind of restaurant. When our founder, Shigemi Kawahara, set out on his journey to become a ramen chef, he wanted to be the best among his peers. Ramen is a cosmos served in a bowl. The delicate balance of ingredients, broth and noodles is an art form in itself. Kawahara is often dubbed the Ramen King, having been crowned the title five times on various television programs and competition. He holds a place in the Ramen Hall of Fame after three consecutive wins on TV Champion Ramen Chef. Kawahara is a charismatic entertainer in the kitchen. As a young boy, he dreamt of being an actor. When he started his first IPPUDO restaurant in Fukuoka in 1985, he lived out his two dreams - restauranteur and actor - by being the consummate story-teller in the kitchen. He sees the restaurant as a stage where every employee plays a role like an actor. From cooking to serving, every move is choreographed to perfect timing, from the moment a customer arrives until the customer bids goodbye.
