The cooking is light, savant use of herbsand spices. Colour is important: green, dark, red and yellow, obtained from natural ingredients, to excite the eye and plate. How afghani qarma is cooked? Qorma is a stew or casserole or curry usually served with rice and bread Most qormas are onion-base d. Onions are fried, then meat is added, as are a variety of fruits, spices, and vegetables depending on the recipe. Finally water is added and left to simmer. The onion caramelizes and creates a richly colored stew (no thickening agent used) How Afghani pilaf is cooked? Central Asian style which is Dum 'air-cooked' or 'baked. first rice is hand washed soaked in water over night. Boiled ½ way, strain mixed with salt water and touch of oil and then given Dum (long grain low GI basmati rice is used )
