3 OUR IDEA OF THE JAPANESE CUISINE Japanese cuisine is considered one of the most sophisticated and healthiest cuisines in the world. It is our aim to create an authentic interpretation of Japanese cuisine and to make this fascinating culture accessible to you. Because good food should not just fill you up, but above all make you happy.

5 SUSHIYA Together with a few brave friends, the former Japanology student Alexander Reinelt founded SUSHIYA as a Munich-based company in In the SANSARO restaurant, Alexander and his team have been presenting to you an authentic interpretation of Japanese cuisine since QUALITY It has always been our mission to use high-quality ingredients that are organically sourced whenever possible and experienced chefs before and behind the scenes. Our salmon is always Label Rouge, a seal of approval for quality and humane animal farming. Our beef comes from John Stone in Ireland, who are known for their top quality, both in breeding and taste. As is customary in Japan, we serve a soy sauce matched by our chefs to our sushi & sashimi. As the basis for our house blend, we use an organic soy sauce made in Japan using traditional methods. 9 MAIN COURSES 主菜 Yasai Kushiyaki Seven different barbecue skewers with seasonal vegetables, either with teriyaki marinade (homemade using chicken bones) or vegetarian with a ginger and soy sauce Shōgajōyu Yasai Tempura A variety of vegetables, delicately deep-fried in a wheat batter Japanese-style, with soy dashi sauce and shōga oroshi (grated radish with ginger) for dipping Shake Teriyaki Pan-fried Label Rouge salmon in a spicy teriyaki sauce with pimento peppers, spinach and shiitake mushrooms. Incidentally: for the Japanese, the fried salmon skin gives the dish its finishing touch! Suzuki no Sugatayaki Whole grilled loup de mer (sea bass) with Maldon sea salt, with a garnish of vegetable chips. Made in the okashiratsuki-style, which the Japanese like to serve at special occasions such as weddings, anniversaries and other celebrations! Gyu Kushiyaki Steak Premium cut of John Stone beef, diced, skewered and grilled (approx. 180g), served with a variety of Japanese spices such as yuzu koshō, sanshō, chopped spring onions, grated chili radish and changing shichimi (Japanese spice mixture with chili) from Japan Yakiniku Delicate pieces of organic premium cut of beef by John Stone (approx. 160g) in a teriyaki sauce with mixed vegetables and a small side salad Portion of Rice As a side dish on request 2.00 Please note that sansaro is primarily a sushi restaurant with just a small kitchen for hot dishes. This means that you may have to wait a little longer if several guests order hot dishes at the same time. As a general rule, Yasai Tempura takes longer to prepare. Thank you.

We offer them as a compromise, to accommodate the habits of our German guests and give them a quick and easy introduction to sushi. We recommend sushi aficionados to taste their way through our extensive à la carte sushi, which you can find on the following pages. Our sushi platters cannot be changed we thank you for your understanding.

12 SASHIMI 刺身 Sashimi are fish fillets on their own, without rice. Their preparation calls for high standards of freshness and a special cutting technique they are particularly delicate and mild. The various cream cheese combinations are not so common in Japan, but they are very popular in Germany and America. 17 EXTRA ROLLS The Extra Rolls are our chefs' own creations and are a very special interpretation of fusion sushi. "Mediterranean" Tuna marinated in olive oil with salmon, avocado and chives on a bed of leaves, with a wasabi soy sauce "Bharat" Strips of fresh mango with prawn, bell pepper and rocket, garnished with balsamic cream 9.80 Torikara Maki Baked chicken with spring onions, chives and rocket on a bed of onions with a chili and mayonnaise sauce 9.90 Spider Roll Soft shell crab deep-fried in wheat flour, flavored with chili mayonnaise, spring onions, sesame and cucumber, served with a special olive and lime sauce "Goemon" Scallops and prawn with fine strips of onion, bell pepper and ponzu jelly strips, with a delicate lemon sauce ISHIKAWA GOEMON is a 16th-century Japanese hero who took from the rich and gave it to the poor.
