HOW TO USE THIS MENU Choose from four catering options: The Flyway Buffet is your starting point for creating and customizing the perfect catering package to suit your needs. Add as little or as much as you like - ideal for any occasion from corporate lunches to wedding receptions. Your food will be delivered and set up on-site in disposable pans. In addition, we offer variety of choices for side dishes, deserts, upgraded service and other add-ons. For more elegant events, we offer a full, Custom Service that provides an endless variety of menu choices and staff options. Mac n Cheese Bar A home-style favorite, dressed up with a variety of toppings to choose, such as bacon, fried onions, smoked chopped beef, pulled pork, or sausage. Texas Taco Bar A Texas-style BBQ twist on traditional tacos. Includes chopped/sliced brisket, savory pulled pork, shredded BBQ chicken, or smoked sausage with spread of toppings including freshly diced tomatoes and onions, jalapeños; home-made guacamole, sour cream, salsa, and BBQ sauce.

BBQ Sliders Perfectly-sized snacks packed with any one of our delicious smoked meats, coleslaw and BBQ sauce. Jalapeño Poppers Smokey jalapeño peppers, stuffed with cream cheese, tender beef brisket, and wrapped with bacon. Smoked Salmon An Ugly Duck take on a timeless Alaskan smoked salmon recipe split into bite-sized pieces served atop a bed of cream cheese and a multigrain cracker, and garnished with a honey mustard sauce and fresh dill. Corn Bread Beef Bites Our beef brisket, accented with lime juice, and piled onto cornbread squares, all garnished with cilantro Baked Potato Volcanoes Cored baked potato erupting with delicious melted cheese, green onions, and sour cream, all wrapped in mouthwatering bacon. Caprese Bruschetta Sliced mozzarella, roma tomatoes, and fresh basil on toasted French bread topped with balsamic glaze. S mores Station Hershey s Milk Chocolate, Marshmallows, and Graham Crackers. 6 T E R M S A N D C O N D I T I O N S GUARANTEED HEADCOUNT To provide you with the best service possible, we require that you submit the guaranteed headcount for your event to an Ugly Duck BBQ Representative no later than 72 hours prior to the Event. Ugly Duck BBQ will not discount or reduce the contract price if the actual number of your guests at the time of the Event is less than the guest count you submit to Ugly Duck BBQ. This is the number we use to both prepare your food and calculate your costs. CONFIRMATION AGREEMENT To ensure that our customers know all details regarding the services they will receive from Ugly Duck BBQ, all catering events will be finalized with a signed confirmation agreement. This required agreement is designed to both protect our customers and prevent misunderstandings that may arise. PAYMENTS & DEPOSITS You must pay Ugly Duck BBQ the balance due no later than 5 days prior to the Event Date. Your failure to pay the balance due on time shall be considered a cancellation of this Catering Contract. Any Event booked less than 5 days from the Event Date must be paid in full at the time of booking. No different payment terms apply unless otherwise agreed in writing signed by Ugly Duck BBQ authorized representative. CANCELLATIONS AND REFUNDS If you give Ugly Duck BBQ a written notice of cancellation more than 5 days prior to the Event Date, Ugly Duck BBQ will agree to cancel this Catering Contract at no charge, and will refund any deposit paid. In the event that you cancel this Catering Contract within 5 days of the Event Date, for whatever reason or cause (including without limitation Acts of God, weather, cancellation by location, etc.), you will remain obligated to pay the entire invoice price to Ugly Duck BBQ. You agree that invoice price represents a fair and reasonable estimate of the losses and expenses Ugly Duck BBQ would sustain as a result of late cancellation, given that actual damages are uncertain and not susceptible of exact measurement as of the date of this Catering Contract. COLLECTIONS Any amounts remaining unpaid after the Event shall be overdue and accrue interest at a rate of 25% per month (unless otherwise agreed in writing by Ugly Duck BBQ). In the event that Ugly Duck BBQ takes any action (whether or not litigation is instituted) to collect unpaid amounts due to Ugly Duck BBQ you agree to pay the reasonable costs of collection (including court costs and attorney s fees).
