2 Served from 12-9pm At the Borrowdale Hotel we have our own smoker, where we smoke produce such as salmon, chicken, duck, vegetables and even fruits. The salmon is soaked in salt, brown sugar and a blend of spices for 24 hours before being smoked for another 24 hours using local wood chips, giving it a robust and unique flavour.
