9 When mum and I landed in Australia in 1988, we didn't know what to expect - she had been a teacher for years but she didn't speak any English and couldn't use any of those skills to earn a living here. We had to start again and the country began as strange and scary but that didn't stop her. She wanted a better life for me and with that as her driving force she started her first job as a kitchen hand in a Vietnamese restaurant in Marrickville for $4 per hour! Fast forward 28 years and with a string of restaurants and even a bakery in her resumé, she has decided she wanted something new. Around the same time, I really found my passion in cooking and as her only son, I wanted to continue her culinary legacy by incorporating modern methods and ingredients into her amazing recipes. Mum has done the hard yards to get to where she is and has now willingly (I think) allowed me to experiment and create something new, unique and tasty with her. At Hem Nine Nine, we aim to give you tasty street food with a modern twist but without losing the essence and flavours which make Vietnamese food so fresh, simple and delicious. "Same same, but different!"
