2 Andreas C. Studer cooks for SBB dining-cars. Dear Passengers In October and November we will be serving specialities the canton of Jura in the SBB restaurant car. In collaboration with the Hotel du Boeuf in Courgenay, I have created some delicious dishes for you: as a light starter I recommend my salad of red lentils, diced carrots and apples with healthy rapeseed oil and tangy white wine vinegar. The creamy autumn-style pumpkin soup full of locally grown vegetables is served with crispy croutons. Boeuf braisé is a speciality from the canton of Jura which you should definitely try: smoked roast beef served with a hearty red wine gravy and mashed potatoes with diced vegetables. Don t forget a dessert to round off your meal: creamy semolina with raisins, served with a delightfully fruity raspberry sauce. I wish you an enjoyable trip! Andreas C. Studi s lentil salad with apples and carrots Red lentils in a healthy combination with diced apples and carrots, finished with rapeseed oil and white wine vinegar. Monk s Head cheese is better known as Tête de Moine We added onions and mustard to the quiche made with this fine cheese.
7 Main courses. Madras & Mango Casimir curry Spicy chicken curry served with lemon-grass basmati rice. Sliced veal Zurich style Tender Swiss veal in a deliciously spicy creamy mushroom sauce, served with hand-made spaetzli. Studi s schnitzel in a cream sauce with butter noodles A true classic: tender pork schnitzel in a creamy sauce with lemon juice and chives. Butter noodles and buttered vegetables on the side. Thai curry Local vegetables simmered in coconut milk, served with basmati rice flavoured with lemon grass. Boeuf braisé ajoulot A Jurassian classic: smoked roast beef in a hearty red wine gravy served with mashed potatoes and diced vegetables.
8 Mediterranean cuisine. Crescent ravioli in a tomato and mascarpone sauce Scrumptious little parcels: crescent ravioli with an exquisite cheese filling, accompanied by a tasty tomato and mascarpone sauce. Studi s saffron risotto with fennel Hearty saffron risotto with fennel, mascarpone and tangy Sbrinz cheese. Magic Ticket dish for children. Casimir curry or Crescent ravioli in a tomato and mascarpone sauce We serve this dish to children up to 16 years of age. No further discounts.
