2 Jean-Marc Heussner Introducing Executive chef Jean-Marc. Beginning his culinary career 43 years ago at La Sole Normande, a small seafood restaurant south of Paris, Jean-Marc has worked across the globe from a Michelin Star restaurant to prestigious hotels, and now calls the Gold Coast home. Jean-Marc s food passion is Modern-Australian, noting his support for localvore movement whilst infusing flavors inspired from the international dining scene.
