2 Bacon Cheddar Chowder and Red Lobster Cheddar Bay Biscuits (for 2) 1 2 Preheat your Oven to 425 degrees on bake. Wash all of the vegetables for this meal. Now, lets start the prep! Begin by peeling one carrot and then slicing it. You may enjoy these more if you also slice the larger carrot down the middle, making smaller bite size slices. Next slice the celery similarly. Peel the red onion and remove the root end. dice the onion as shown. Cut away any brown or questionable parts of the three medium red potatoes and dice the potatoes into bite size pieces. We recommend no larger than 3/4 square pieces. 3 4 In a stock pot and using kitchen scissors, cut the bacon into small pieces. Start the bacon off by itself over medium high heat. When about halfway done, add all of the celery and rounded 1/4 cup red onions and continue cooking until bacon is crisp and onions are translucent. 5 While the carrots and potatoes are 6 cooking, add the Red Lobster Cheddar Bay Biscuit mix to a mixing bowl. Add 3/4 cup water and 1/2 cup sharp cheddar cheese. Mix in bowl by hand until mixture become a dough. Melt the butter in the microwave and add the biscuit seasoning to the butter. Spray a large baking sheet with your favorite non stick spray or wipe the sheet down with butter on a paper towel. Using a 1/4 cup measuring cup, scoop the dough loosely and place on the baking sheet. Once you have roughly 9 biscuits, Place them in the oven, setting timer for 14 minutes. 7 Once the potatoes and carrots are fork tender, add 3/4 cup creamed corn and 3/4 cup evaporated milk. Once soup is nearing a boil, add 1 cup shredded sharp cheddar cheese and stir until it melts and becomes a creamy chowder consistency. 8 Check the biscuits if you haven t already. When you remove them, and while they are still very hot, gently brush the biscuits with the butter and seasoning mixture. Remove bacon cheddar chowder from heat and serve in serving bowl.
