2 The Pawn In Wan Chai Dating back to 1888, The Pawn is housed in one of Hong Kong s most historical buildings. What was once the famous Woo Cheong pawn shop became The Pawn in 2008 and re-opened in collaboration with British celebrity chef Tom Aikens after an extensive refurbishment. Featuring modern British cuisine on the second floor Kitchen and handcrafted cocktails and artisanal spirits on the first floor Botanicals bar. With a permanent art collection curated by well-known Hong Kong artist anothermountainman (Stanley Wong) featuring some of Hong Kong s top contemporary artists, The Pawn has become more than just a dining space. It is a communal social venue for an eclectic mix of groups and sub-cultures, celebrating retro-futurism, arts & design, through casual-chic, al fresco and relaxed dining.
3 About Tom Aikens For over a decade, Tom Aikens has been hailed as one of the UK s most innovative chefs. After honing his skills in kitchens alongside Pierre Koffmann and Jöel Robuchon, Aikens was named Head Chef at London s Pied à Terre. At 26, he became the youngest British chef to ever earn two Michelin Stars. Inspired by Robuchon s attention to detail and Koffmann s emphasis on provenance, Aikens has earned a reputation for his culinary innovation and technical skills. Tom Aikens Restaurant, his Michelin-starred eponymous fine-dining establishment on Elystan Street in London, ran for over a decade from In 2006, the celebrated chef opened Tom s Kitchen, a modern British restaurant in Chelsea serving comfort food. Since then, he has expanded the concept to five other locations, including London s historic Somerset House, Canary Wharf, St. Katharine Docks, as well as Istanbul in Turkey, which opened in Aikens has also authored three books: Cooking (2006), Fish (2008) and Easy (2011).
