2 Canuti, long lasting tradition The story of Canuti Tradizione Italiana is one of those genuine Italian stories that speaks of love for its own roots, passion for pasta and a taste for innovation. It all starts with Mario Canuti who, in the early 1950s began the dream when he opened a small pasta making workshop in Rimini. In the 1960 s the dream takes shape with Mario s five children entering the business to open a larger premise which fuels distribution growth and establishes Canuti as a major reference point for quality artisan pasta in Emilia Romagna. In the mid-1970s, pasta vans are seen delivering our fresh pasta up and down the Riviera coast to hotels and restaurants. During this period, the Canuti family begin also selling to Italian supermarket groups there much loved pasta. In the 1980 s, with major advances made in deep freezing technology, the company starts to focus its intention on deep fresh frozen pasta which eventually becomes the platform for expansion into International markets as far away as Japan, as products could now be produced and delivered without changing the organoleptic qualities of pasta and importantly without adding preservatives. The 1990 s sees the third generation of the Canuti family take the helm of the company. By now a leading player in the Italian market in both retail and Ho.re.ca., Canuti fresh frozen pasta is now being enjoyed in over 22 export markets stretching from Europe into Asia, North America and Eastern Europe. Today the Canuti brand maintains all the tradition, passion and excellence, built and maintained from generation to generation. Artisan pasta produced to industrial standards, carefully selected quality ingredients and one of the few pasta manufacturing companies using a bronze wire drawing system to give its pasta that special rough surface needed to hold pasta sauces in place. Sixty years on, Canuti Tradizione Italiana is at the for-front of Italian pasta. 3 In my work, I am guided by a passion for good food. This prompts me to always seek extra-fresh raw materials, wholesome ingredients and authentic flavours. That s why, when I came across Pasta Canuti, it was love at first sight. I was immediately struck by its pleasantly rough texture ideal for capturing sauces and dressings and that unmistakable deep yellow colour, the upshot of bronze drawn pasta. And then its fragrance and its flavour definitely won me over! Pasta Canuti has the same flavour as my land, the flavour of the fresh homemade pasta of times gone by, which only the skilful pasta makers of Romagna could make. Pasta Canuti has become the main ingredient in my first course recipes and, time and time again, I am surprised by its versatility in preparing lots of different dishes, thanks to the broad variety of fillings. 4 4 Easy steps to prepare a perfect Canuti pasta dish -0,4 1 Drop the still frozen pasta (without defrosting) into salted boiling water or stock. Please note, pasta/salt to water ratio: 100 g pasta to 1 litre of water, 20 g salt to 1 litre of water. 2 Increase the heat and boil according to the indications given on the label to obtain perfect al dente pasta. 3 Gently drain the pasta. 4 Pour the pasta into a pre-heated pan, add your favourite dressing or sauce, then briefly sauté for a few seconds until well mixed. Serve immediately on pre-heated dish and enjoy.
