Located on level one of the hotel, Republic s beautifully renovated fine dining room features elegant decor and of modern rustic finishes that create a delectable environment for those unforgettable corporate lunches, evening celebrations or one-off casual experiences. With an exciting wine list to match, Republic Dining aims to offer a mouth-watering, pleasurable dining escape amongst the busy city streets. Republic Dining presents enviable options for your next lunch reservation or private event. Casual Dining is available in the restaurant weekdays from lunch through to dinner. The restaurant can accommodate both small and large reservations as well as be hired privately for those special celebrations. Of course for something a little more exclusive, you may make use of our private dining space, as to create a whole new dining event for you and your guests. The level 2 private room may be booked for up to 30 guests seated, and is the perfect space to entertain. Whatever the occasion, Republic Dining are sure to impress.

3 PACKAGES For bookings of 10 or more, Republic Dining offers tailored set menus designed specifically for your event. Your event can be held in either our main dining room, or, our private dining space. You may select from the following limited a la carte packages: 2 courses at $75pp OR 3 courses at $85pp All options are inclusive of sides chosen by our executive chef to complement your selections. A limited a la carte offering allows a more intimate, unique experience for guests to enjoy. You may wish to add a selection of our beautifully selected international cheeses to your booking for an added touch, or opt to add a selection of house-made petit fours for your guests to enjoy with coffee and tea. Ask our functions team about our additional extras when booking your next formal event! Our sommelier will assist you in choosing a selection of our excellent wines to add those finishing touches.

5 ROOFTOP THE JUNGLE MEETS THE CITY, WITH A BREATH OF FRESH AIR Opened in June of 2015, Taylor s rooftop bar and lounge is the venue that Sydney was desperately crying out for. You could be forgiven for forgetting that you were in the grasp of the 9-5 grind, in the middle of the corporate stranglehold, just by walking up the stairs, and into the greenery of Taylors superb set up. But then you look up, to see the city skyline dancing above you. You feel safe however, because just a few more steps away, awaits the stunningly designed, contemporary bar, highlighted by the copper keg hanging from the roof you ve reached your destination. An otherwise smart casual bar, the space is made remarkable by the stand out green wall which creates a mesmerising tableau of lush greenery that sits perfectly against the sun coming through the open roof, or the glowing lights of the night sky. Catering for any occasion, Taylor s creates an immense atmosphere that can t be reiocated anywhere else. 6 OPENING TIMES Monday-Saturday / 12:00pm-late Sunday: Closed Whilst the rooftop cannot be hired exclusively, we have plenty of spaces available to host your desired social or corporate occasion. Here at Taylor s we like to tailor packages on an event by event basis, so you re getting exactly what you have been dreaming up for the day. We love a good event on our stunning rooftop space, and can cater anything from easy afternoon cocktails to canapé functions, product launches to long lunches. The team here at Taylor s will look after you and your event down to the very last detail! You may opt for roving canapé service to entertain your guests, or maybe a selection of our specially designed grazing boards for that added visual appeal! Beverages are just as easy with your choice of custom designed bar tabs. If you can think of it, we can design it! Booking policies differ between days, so please contact our events team further for more information on booking your event at Taylor s.

7 A PRIVATE OASIS An extension of Taylor s Rooftop, The Social Lounge is the perfect location for your next private event. Tucked away on level 2 of the hotel, this space caters to formal lunches and dinners, as well as large cocktail style celebrations. The Social Lounge is a desirable canvas for the beginnings of your next function. The space will be offered exclusively for you and your guests for the duration of your event. This gives you private use of the level, a private bar, full AV facilities, access to DJ decks and a range of tailor made packages to best suit your needs and desires. We offer cocktails on arrival as additional extras and you can arrange in house decorations, photo booths and entertainment for some added touches should this be of interest to you! After your event s conclusion, guests can make their way to the rooftop to continue celebrations should they wish. It s always a nice option! PACKAGES Monday-Saturday: $3, % service fee on F&B Minimum spends may be split towards food and beverage as you please, room hire charges do not apply.

8 TERMS & CONDITIONS Terms and conditions outlined below apply to all confirmed event bookings here at The Republic Hotel. Should you have any questions or concerns, please contact us in the office to discuss. 1. Failure to return any signed events contracts within five working days gives management the right to release the booking. 2. All prices are inclusive of GST. 3. Cancellations must be in writing. 4. The Hotel takes all reasonable care but no responsibility for damage, loss or injury to person or property while at the Hotel. 5. Prices, products and menus are subject to change at any time. 6. Deposits are refundable when no less than 72 hours notice is given. 7. All remaining monies owing must be settled at the conclusion of the event, on the evening. 8. A 10% service fee will be added to your final food and beverage bill. 9. Minimum spends apply to all bookings. Minimum spends must be reached by the finishing time of the event. Any shortfalls will be charged to the host. 10. Final numbers are required no later than 72 hours before event commencement. If fewer guests attend, the guaranteed number of attendees will be charged. If extra guests attend, each will be charged accordingly. 11. The hotel is not obliged to provide catering or other facilities for guests attending the function in excess of 5 persons more than confirmed. 12. Event hosts and any guests attending the celebrations assume responsibility for any damages incurred during the course of the evening. They agree to pay for any damage caused to hotel property in a timely manner. 13. The Republic Hotel and related security reserves the right to refuse entry/remove any persons whose behaviour they deem to be inappropriate. 14. Guests are not to bring any food or beverage items into the venue at any stage unless authorised otherwise. 15. No decoration, signage or notices may be placed in the room or other areas of the hotel without authorisation from the team at Republic. 16. Nothing shall be affixed to the floors, walls, ceilings or columns of the allocated rooms by nails, screws, drawing pins, tape or any other means. 17. Hosts and guests agree to vacate the venue/room at the agreed upon finishing time. No than a 15 minute lee way will be acceptable. Should guests fail to vacate the booked room at the allocated time, room hire fees will be charged per half hour from there on. 18. The Hotel practices Responsible Service of Alcohol at all times. Any persons that staff deem to be intoxicated will be asked to leave the event and the venue.
