Spicy and creamy in taste. The cheese is named after Lady, the leading lady of the goat herd. Wild boar ham with roasted pumpkin and mushrooms, apple mustard vinaigrette, crispy bacon and endive Smoked salmon by Veltman Vis from Harlingen with red beat, spinach, capers and mustard vinaigrette COLD DISHES All cold dishes are served with salted farmhouse butter and bread Mozzarella from Grootegast (Groningen) with a beet salad, watercress and pistachio 9.75 and fermented beet Buffalo mozzarella from Grootegast is made at Orobianco, the farm of Martha van Zwol and Martijn Veenstra. The mozzarella is made of fresh Dutch buffalo milk and is artisanal made. Because the mozzarella is evenly pasteurised, it is also suitable for pregnant women. Wine tip: Chardonnay Le Quartier de Ménilmontant 2017, 6 per glass Calf tongue and crunchy sweetbread with grape mustardmayonnaise, butter lettuce varieties and smurnals Sweetbread is a true delicacy in French cuisine.
