1 BA 1 JANUARY BON APPÉTITE By: Dining Services General Manager, TimColley@blueskiestx.org Blue Skies East Dining Services Thursday, Jan 5 Saturday, Jan 31 Sky Lounge Reservations BST East Dining Reservations BST East reservations to V1foodreservations@blueskiestx.org ~Cochran s Closure~ Friday, January 16, 2-4pm - Closed for our monthly service meeting. SKIES EAST DINING NEWS By: Food Service Director, RickRayos@blueskiestx.org Did you know as a result of your feedback and DRAC comment cards in 2014, we now show the nutritional values across all of your Cochran s menus? In spring of 2015, we also plan on making nutritional values available for the Sky Lounge daily buffet to help our resident family make wise choices while enjoying the menus and venues at Blue Skies East. In addition to regular menu choices at Cochran s, I often get asked about the sodium content of some of our specials and the Sky Lounge Buffet items and felt there was a need to do a little more research. In doing so, I found there are some common foods that contribute more sodium to our diets than others depending on how they are purchased and prepared. The basic daily food allowance/recommendation for sodium is to eat no more than 2,400 milligrams (mg) of sodium per day. That being said, I would like to highlight six foods that took me by surprise. The first is one of my favorites - tasty pancakes. While chocolate chip pancakes offer a higher content of 2,000mg of sodium, the ready-made mixes have only 400mg of sodium per serving and pourable mixes have 700mg for three pancakes. Another breakfast item that may surprise you is the bagel. Bread can be a major source of salt. One bagel can contain 460mg of sodium without the cream cheese. The third item on our list is cottage cheese. While it is a great source of protein, a one-cup serving can contain almost 1,000mg of sodium. Cereal can be healthy way to start your day or a salty one depending on what you pick. Many cereals have 180 to 300mg of sodium per serving. Number five would be the classic sandwich. After counting the sodium in bread, deli meat, cheese and turkey - sodium content can easily add up to 900mg or more. Last, but not least, are sauces. Marinades and salad dressings may contain salt, and
2 sometimes can even taste salty. A two-tablespoon serving of salad dressing or barbecue sauce may have 300mg of sodium. This research was an eye opener for me and hopefully will help you as you decide what and how much you may eat of a certain item. With the help of the culinary team and your Dining Room Advisory Council (DRAC), we have made great strides in providing more variety and nutritional choices for all who dine at Blue Skies of Texas East. With your feedback, we will continue to improve our recipes and nutritional values for your dining experience. ~ Sky Lounge Special Entrees ~ ~Jan 2 & 3~ Stuffed Trout $18.00 ~ Jan 9 & 10~ Blackened Salmon w/spicy Buerre Blanc (white butter) $18.00 ~ Jan 16 & 17~ Seafood Alfredo $15.00 ~ Jan 23 & 24~ Butterfly Golden Shrimp (8) $15.00 ~ Jan 30 & 31~ Grilled Salmon Bruschetta $18.00 BA 2
