4 Our selection of rice (Minimum two people, except for tables of 1 diner) Dársena was the first restaurant to incorporate, for its 25th anniversary in 1986, the concept of "rice restaurant," and in this period we cooked 25 different types of rice. In that year we modified our letter changing the name "paella" to "rice" to give a culinary sense to our establishment and identify it with the main gastronomic value of our city. Rice is our reason for being. From cultivation to grinding, we keep an eye on their growth and treatment to ensure the best final results. We use the "Albufera" variety from DO Arroz de Valencia for all our dry rice, for its strength and ability to drive the taste. The variety "Marisma" is the one we chose for soft rice, because of its size and starch content which favors the creaminess. We reserve the variety "J. Sendra "for our delicious rice pudding. If you want to take the rice in the paella, ask at the start. In that case, only one variety of rice will be served at table. If you ask us for rice to take away, we will use of the variety "Bomba", so that it does not soften until arriving at home.
