2 Indian food has a depth and flavour which is second to none. It can be particularly flavoursome and welcoming when prepared by our talented masterchefs. It also has a great sense of history and tradition, which is about gracious hospitality, sharing with family and friends and enjoying what comes naturally. This is what the essence of Indian dining is all about and here at Blue Diamond we would like to share that pleasure with you. We pride ourselves in continuing the heritage of serving freshly prepared, flavoursome and healthy Indian food to our customers. From delicious and zesty puris to wonderful starters, Smokey kebabs and classic, finger licking curries and sizzlers.

MEAT SOMASA Crispy pastry envelopes filled with mincemeat seasoned with mixed herbs and spices. VEGETABLE SAMOSA Crispy pastry envelopes filled with mix vegetables-seasoned with mixed herbs and spices. CHICKEN PAKORA Lightly spiced chunks of chicken bound together with gram flour deep fried until crisp and golden colour. HOT MEAT PUREE Cooked in a sweet and sour slightly hot thick sauce wrapped in pan fried puri (indian pancake). TIKKA Diced boneless meat marinated in fresh aromatic spices barbecued in the clay tandoori. served with salad. CHICKEN LAMB FISH KING PRAWN RAJ RANI HAWELI Fried chicken breast with green chilli. SPICY CHEESEY CHICKEN Chicken breast pieces with fresh green chilli, marinated, grilled and finally garnished with melted cheese served with pepper fried onion and salad. GARLIC MUSHROOMS Pan fried with aromatic spices and garlic. Served with salad. ONION BHAJI Shredded onion mixed with freshly ground spices bound with gram flour and deep fried until crisp and golden. KING PRAWN PROZAPOTI A butterfly king prawn coated in a crispy coating and deep fried until golden brown. GARLIC PRAWNS Fresh prawn and garlic, pan fried with aromatic spices. Served with salad. MACHLI ALOO FISH CAKES Fish cakes made from flakes of fish freshly ground herbs spices and potatoes coated in bread crumbs. BLUE DIAMOND SPECIALITY DISHES GOAN FISH CURRY A curry traditionally made in the fishing villages of goa fresh white fish ginger and chillies hot with an exotic taste. Served with pilau rice. SARSN JHINGA Grilled jumbo king prawns flavoured with kasundi (yellow mustard paste)and lemon juice skewered in tandoori served with salad and pilau rice. PERI PERI A dish made with chunky onion,peppers,tomatoes and aromatic spices. Served with pilau rice. CHILLI FRY Shredded chicken or lamb or tiger prawn tossed with fresh green chillies onions green peppers ginger and roasted garlic a lightly spiced dish. Served with pilau rice. BIRIYANI VEGETABLE CHICKEN LAMB PRAWN CHICKEN TIKKA LAMB TIKKA KING PRAWN MIXED Cooked and baked with basmati rice and served with vegetable curry a prestigious dish historically served at moghul empire occasions. BLUE DIAMOND BIRIYANI A special preparation of chicken tikka, lamb tikka, keema, mixed herbs, safron rice garnished with a omelette and served with vegetable curry sauce. CHEFS SPECIAL BIRIYANI A special preparation of chicken, lamb & prawn, mixed herbs, safron rice garnished with a omelette and served with vegetable curry sauce. MALAYAN BIRIYANI The addition of boiled egg, pineapple, bababa, coconut powder, nuts and sultanas result in a sweet flavour served with korma sauce.

MURGHI MAKHANI Boneless barbecued chicken pieces. cooked with cream and pure ghee. THAI CHICKEN AKBORI Strips of fresh chicken breast cooked with fresh chopped onions cooked with chef own spices. CHICKEN LAHORI Pieces of chicken tikka and minced lamb in a medium spiced sauce. LAMB NIHARI Prime fillet of lamb cooked to perfection served with a thick sauce and topped with golden brown onion fresh ginger and coriander. MAZADAR MASS A traditional bangladeshi curry made with ginger coconut and chillies. MIRCHI KA BAHAR Succulent pieces of chicken marinated in special massala spices fresh green chillies garlic and coriander paste in a rich thick medium spiced sauce. HARI MIRCHI BHUNA Chicken or lamb cooked with fresh green chillies coriander and tomatoes fused with ground aromatic spices garnished with sun-dried chillies. SOUTH INDIAN GARLIC Fresh garlic marinated in a yoghurt sauce and roasted with mince meat. SATHKARI Chicken or lamb chunks cooked in a traditional bangladeshi sauce of calamansi wild lemon juice and fresh green chillies a fairly hot and spicy dish. CHEF SPECIALITY DISHES KOFTA MASSALLA Cooked with chunky onion and capsicum with massalla sauce,served with a topping of cheddar cheese. HONEY CHICKEN Succulent chicken pieces cooked with acacia honey,aromatic spices to give a sweet,mild taste. 7 TRADITIONAL DISHES VEGETABLE JALFREZI Barbecued and stir fried with chopped onions tomatoes green peppers and fresh green chillies in a specially prepared spicy hot sauce. PASSANDA Cooked in cultivated yoghurt cream and fragrant spices with an essence of rose water. BALTI Cooked using the stir-fry method. A centuries old cuisine combining Tibetan influence with Kashmiri style spice. KARAHI Chicken or lamb sliced and cooked with chopped green peppers sliced tomatoes and chopped onion a medium dish in a thick sauce served sizzling from an iron wok know as karahi. MADRAS A south indian version of the dishes popular in central and eastern india having a greater proportion of gram masala which lends a taste to it. VINDALOO Cooked with dozens of spices added to qualify this as the most extravagantly hot dish. KORMA A delicately spiced mild dish cooked in coconut cream and freshly ground mixed nuts. BHUNA A fairly dry curry cooked through the bhuna cooking process using onions capsicums and tomatoes. DUPIAZA Cooked with an abundance of sauteed onions accompanied by a selection of aromatic spices tomatoes and green. DHANSAK A hot sweet and sour dish extensively prepared with lentils lemon juice and aromatic spices spices in a thick. PATHIA A hot sweet and sour dish extensively prepared with onions a hint of garlic and selective fresh ground spices. ROGAN JOSH Spiced with freshly ground herbs then sautéed with lots of tomatoes onions cooked wiht a selection of oriental spices. SAMBER A fairly hot spicy dish based upon the use of lentils other herbs and spices with fresh lemon added to obtain a sharp and distinctive flavour. CURRY Basic curry a sauce of medium consistency produced form a wide but basic range of oriental spices giving a rich flavour. KASHMIRI Mild cooked with cashew nuts sultanas and bananas. MALAYAN Mild cooked with banana and pineapple. CHICKEN LAMB SRILANKA Special blend fairly hot and spicy cooked with coconut. PRAWN SAAG Cooked with spinach green chillies and aromatic spices producing a spicy thick rich sauce. BINDI Lamb or king prawns stewed with fresh diced okra and ground spices producing a spicy thick rich sauce. NAGA Cooked with aromatic spices bangladeshi chillies very hot dish.
